If you have munchkin’s around, I hope the Easter Bunny came and left them a few little treats (after all, all good kids deserve at least one piece of chocolate!), and that said bunny didn’t eat your Spring flowers!

Today is the day of love, the color red and roses – yep, Valentine’s Day. Usually I don’t really do much with this day, actually, I don’t think I’ve celebrated it in any form since I was in elementary school and everyone would bring in Valentines for everyone in the class!
This year Mike and I went and got a few Valentine’s photos courtesy of Lance Lee Photography. I thought that as a result I would share one of the photos with you all.
Mike, the cats and I wish you all a very Happy Valentine’s Day filled with love and joy. If you don’t have a special Valentine, enjoy it anyway, go for supper, eat cake, and treat yourself as well you would be if you had one today!
For as long as I can remember I have dreamed of, and hoped for the day I could finally own my most coveted kitchen appliance. Wait, what does that say about me if my most dreamed for item is a kitchen appliance? Not gonna lie, I like to cook and I love to bake! Well, this year on December 26 Mike made this dream of mine come true. We’d opened all of our present’s and the told me to close my eyes. I heard him go downstairs and come back up. When I was allowed to open my eyes back up there was a large box in front of me. Needless to say, I tore into it! What did I find? This . . .
Not only was it my dream mixer, it was in my color! I have always wanted a red Kitchen Aid Stand Mixer and now I have one. The start of having all red appliances has begun. Oh Mike, you’ve created a baking monster!

This year Mike and I decided to host Thanksgiving supper for his family (mine of course being in another part of the country – maybe next year). This was the first time either of us had hosted a big holiday dinner, either together or apart, and also the first time we’d had his family over for supper! I’m glad to say, it went off without a hitch, and I didn’t give anyone food poisoning 🙂
Mike’s mom picked up the Turkey for us and we provided the rest of the food. I spent the entire day cooking as the Turkey was a whopping 30 lbs! Now that’s a big bird. I also spent a little bit of time painting on a table cloth as the start of a new tradition. I discovered this idea on pinterest. If you don’t know what pinterest is, I both feel sorry for and jealous all at the same time. Most amazing thing and one of the best ways to waste/lose time.
The idea behind this is that you buy a plain light colored table cloth (cotton) and every year at Thanksgiving you use this cloth. Everyone writes something that they are thankful for on it and over the years they build up. I love this idea and can’t wait to see what our tablecloth looks like in 50 years!
I think I’m already looking forward to Thanksgiving next year 🙂
Okay, so this is a little delayed and lacking in photos as for some stupid reason I didn’t pull out my camera once! But last Wednesday M hit the double digits. The double digits people! That’s almost a teenager…OMG, we’re all doomed.
Well, I supposed not ALL off us are doomed, however those of us who live with her are hunkering down preparing the teenage storm that might hold off until the teens, but could just as easily start tomorrow :S
C and I lucked out and it was our week to have M for this big day. The three of us, C’s ex and his parents all went out for supper with M. It was quite nice, and needless to say with that many adults with almost all attention on M she was rather spoilt! Once we managed to drag M home I pulled out a few of the cupcakes I lovingly made for (and forgot to photograph). Mmmm, they were so good that I am not thankful they are all gone and that I am going to bootcamp with several of my friends on Wednesday.
Well, I can honestly say that M had a great birthday. The cats bought her a notebook so when she can’t tell them all her thoughts she can write it down as if they were there with her. I got her a super cute pair of shorts and several out side games – the badminton rackets were the biggest hit – and C got M clothes and a new computer! Lucky kid.
So, if you’d be so kind, send M some wonderful belated happy birthday wishes! I know she’s appreciate them 🙂

He very kindly left a tasty treat sitting around on the bottom shelf of our fridge! One that everyone in this house, cats included (!), ended up being able to enjoy. Don’t worry, I didn’t feed any to the cats, but they did get the decorations to play with. Do you want to see what was left behind? Well, here it is:
While this cake may be considerably less extravagant looking than any others that I have posted in the last while, it was the most delicious of them! I also love the simple elegance of this cake over the more detail oriented ones I have been making – don’t worry I’m still making detailed ones! The cake base was a chocolate cake made from GF oat flour (Jacki if you are reading this, go to this page and try the cake, it will make your worries that much less!). Oh wow, it was so flavorful and rich without being too heavy or unhealthy. Now this is a cake that can stand up to some serious decorating and eating! The only thing I did differently was double the recipe (as my pans apparently held considerable more batter than hers) and instead of using cinnamon, which I can not stand the flavor nor smell of, I used nutmeg and allspice. I can not recommend this cake enough to anyone who is gluten-free or wants to eat a healthier cake that does not taste healthy.
The really neat thing about this cake was that I used one of the fill pans from Wilton, as can be seen here. Since I forgot to take a picture of the cake once it had been cut into, please allow me to borrow from Wilton and show you the inside of their Red Raspberry Velvet Cake instead. Just picture a chocolate ganache coating the cake instead of their lovely white chocolate curls:

The heart filling in my cake was done with a lovely raspberry whipped cream as both raspberries and cream go so wonderfully with chocolate. I then proceeded to ice the entire cake with fresh whipped cream, reserving some for the next on top, and pours a simple raspberry chocolate ganache over to the top of the cake. There was nothing complicated about any parts of this cake, however everything came together wonderfully. The only way it could have been better was if I had fresh raspberries in the whipped cream nest as opposed to the little plastic eggs. I guess I’ll just have to make this same cake again as a Summer cake instead of an Easter cake and do just that.
…and with it came Summer-like temperatures, right now it’s 23 C and sunny outside! I think that is as warm as last Summer ever got, or something close. All weekend has been gorgous and this changing of the seasons brought out my need to clean. By now I swear this apartment has been this clean since we moved in. The only area’s I didn’t clean were C and M’s rooms, and I almost went in to clean M’s, however I have decided to use that as leverge for doing something fun tomorrow as I took the day off of work to stay home with her. You should have seen the amount of crap that I removed from this place. There were four large bags of recycling, 7 medium bags of garbage, a box of cardboard, 7 medium bags of donations, plus two small tables that weren’t being used and just taking up space. I also had to go through five boxes of National Georgraphics for duplicates and to inventorize the ones that were “new” to me. Over half were keepers! Yes Mom, I’ll go through the ones sitting in your basement next time I’m home, I promise.
Even the cats are enjoying this weather. They spent most of Friday and yesterday outside, and would have loved to head out again today. Sadly they are both stuck inside until I managed to get new leads that are Barkis teeth proof. The little bugger got tangled up and instead of crying for help like they normally do, he decided to chew through his lead. Of course he’s not too bright so he chewed through the part that was loose and wouldn’t free him anyway.
Oh yeah, Happy Easter! Hope the Easter Bunny found everyone, be posting about the treat the Easter Bunny left for us in my next cake post. Until then, enjoy your Spring 🙂
